N2 - Transfructosylation of stevioside with sucrose was performed using β-fructofuranosidase immobilized on a variety of porous resins. The productivity of fructosyl-stevioside on the high-porosity resin was markedly higher than on the other resin types, suggesting that the pores in the high-porosity resin play a role in local specific reactions.
